I love PANCAKES! who doesn't but they are usually loaded with calories and sugars, especially the pre-made mixes. After trying several different "healthy" pancake concoctions I found one that I love that is VERY simple to make and is so much healthier for you and packed with protein.
Since this recipe includes Greek yogurt I had to add the recipe on how to make your own flavored yogurt. Usually in store bought flavored yogurts they add a tone of sugars that are not needed to make the yogurt satisfying, and of course anything homemade is much better for you than all the additives that are put into processing food.

Healthy Greek Yogurt Pancakes
Serves 1-2
Yields: ~4 (4-6in.) Pancakes
Ingredients:
6 oz. Vanilla Greek Yogurt or your favorite flavor (*recipe below for homemade vanilla/cinnamon yogurt)
1 egg
1/2 c. Whole Wheat Flour
1 tsp. Baking Soda
Directions:
If you are making your own flavored Greek yogurt go ahead and mix all of the ingredients in a medium bowl. Then add the egg and mix well. It will still have a few lumps in the batter, that is the consistency that you want. In a separate bowl mix together the flour and baking soda and then add to the yogurt/egg mixture. The batter will be very thick. Heat a griddle/skillet over medium heat, make sure it is not too hot (I usually seat my stove-top to somewhere between 4-6). Once the griddle is heated add about a tablespoon of olive oil/coconut oil to the pan. Scoop out the desired amount of batter and once it is in the pan use a rubber spatula to spread it out into a circular shape. Let the pancake cook for about 1-2 minutes on each side until golden brown, then Enjoy!
Top with your favorite fruit, make a homemade fruit compote with honey, or just drizzle raw maple syrup or honey over the top.
Combine 2 pancakes with one serving of fruit to make a complete breakfast (my picture includes one piece of turkey bacon)

*Homemade Flavored Vanilla/Cinnamon Greek Yogurt
Ingredients:
6oz. Plain Greek yogurt
1 tsp. pure vanilla extract
1 tsp. cinnamon
1 tsp. stevia
Directions:
Mix all ingredients together and enjoy adding to so many wonderful dishes or eating as a snack or dip.
